Job Description Reporting to the General Manager, you will guide the Food and Beverage Team across multiple facilities to delivery an exceptional experience for all team members and resort guests, play a leading role in designing & executing the Food & Beverage Operations within the resort. A key focus of this position will be to: Ensure the Food and Beverage Department represents the core values of NRMA in terms of professionalism, cleanliness and guest experience. Maintain these standards whilst working within monthly financial budgets set by NRMA. Work professionally alongside the Chef, Resort Management and Events Team, to create industry leading outlets and functions, and Create and maintain a positive, dynamic working culture that creates moments of exceptional quality. Key responsibilities include: Overseeing and managing food and beverage staff. Overseeing and managing stock for the bar(s) in line with departmental COGS. Conducting training for new staff members. Overseeing and managing the operations of the bar. Supervising shifts/rosters to enable the Restaurant to operate to the demands of the resort and business opening hours in line with departmental wage costs. Organising and placing orders with all suppliers in accordance with business demands. Conference Room Set up and ability to follow C&E sequence of service. Maintaining communications with General Manager to work toward a positive outcome for all the needs of the business. Making sure Rosters are published a fortnight in advance. Conducting staff meetings on a monthly basis to make sure all staff are aligned with upcoming operations and Food & Beverage strategy. Ensuring the department cash reconciliation is accurate and balances. Complying with any reporting set out by NRMA and the resort management. Managing risks & hazards promptly to ensure a safe working environment. Complying with Food Safety laws & legislation for the safety of our guests. Ensuring all team members comply with the responsible service of alcohol. Managing the register for staff who hold a Responsible Service of Alcohol certificate.   Qualifications Ideally, you will have previously managed or held a senior role in a Food and Beverage department you are now ready to move into a role where no one day will ever be the same!
