The RoleReporting to the General Manager of Operations, your primary focus is to drive continuous improvement in all measures of performance of the food & beverage operations with particular emphasis on innovation, reputation enhancement, quality of product and service, and profitability. Particular attention will be on the operations of our premium dining offering, Me-Gal.The Food and Beverage Manager will be a visible leader and promoter of change. By maintaining awareness of industry trends, consumer tastes and new business opportunities, and will build a culture of excellence in all facets of the department, the Food and Beverage Manager will provide consistent leadership and guidance to team members while ensuring operational requirements are maintained and exceeded.  To ensure your success in this role, you will have: A minimum 4 years' experience in a similar hands-on managerial roles in fine dining restaurants or 5-star HotelsA background in high-volume venues with excellent serviceExperience with staff recruitment, training, and ongoing developmentCapable and comfortable with making decisions in real-timeExperience in stock management, ordering, and supplier engagement An outgoing and fun management styleA hands-on approach and a professional investment in the performance of the businessInitiative and motivation to build sales and marketing to grow revenue via the attraction of new businessSound understanding of COGS, labour costs, inventory, purchase orders and invoicingExcellent knowledge of produce and beveragesExceptional customer service and communication skillsHigh standard of grooming and presentation Key Responsibilities: Maximise profitability and achieve F&B sales budgets.Ensure quality and ongoing training is implemented within all departments.Daily review & adaption of rosters to reflect business levels.Assisting the venues to ensure reservation and customer spend maximisation.Providing very hands-on leadership and mentoring of the hospitality team and foster a culture of excellence and teamwork.Hold regular communication meetings with all food & beverage staff.Collaborate with the outlet and marketing teams to develop a calendar of events for each outlet that drives customer visitation and satisfaction.Cultivate relationships with guests, wine club members, local businesses, and industry partners to enhance brand loyalty and drive sales.Ensure compliance with all licensing, safety, and regulatory requirements.
