Barron Valley Hotel is a heritage-listed hotel. It is situated in the heart of Atherton, on the tropical tablelands. The hotel provides a wide variety of facilities and services for visitors including accommodation, restaurant and bar and bottle shops.
We are looking for a Head Chef to take responsibility for the profitable and efficient execution of all catering services at the hotel whilst providing effective leadership to the kitchen staff.
Major Duties and Responsibilities of Position: Control and direct the food preparation process and any other relative activities
Ensure all food is prepared as per food preparation requirements
Ensure meals are produced on time, and sufficient quantities are available for the various areas
Delegate duties to kitchen staff as per the menu requirements
Plan and implement daily food preparation lists for effective production
Oversee and monitor the work of kitchen staff to ensure all tasks are done as required
Give staff feedback on their performance to enable staff development
Hiring, managing, and training of new staff to perform their roles to the required standard
Ensure any staffing issues are resolved fairly and quickly
Meet agreed food cost targets
Meet agreed wage cost targets
Pay careful attention to the operating budgets of the department to ensure that costs are controlled to maintain the correct levels of spending
Determining food inventory needs, stocking and ordering
Ensuring the kitchen meets all regulations including sanitary and food safety guidelines
Creating new menu items, new recipes and developing dishes ensuring variety and quality
Maintain records of payroll and attendance
Develop, document and implement work procedures
Being responsible for health and safety
Ensure staff are aware of and follow safe work practices at all times
Make recommendations to the Manager regarding staffing levels and the composition of staff, necessary to successfully achieve the objectives at the hotel
Provide regular reports and updates to the Employer
Desirable Qualifications and Skills: Relevant Trade Qualification or equivalent is a minimum requirement.
Minimum of 5 years of experience as a Head Chef or Executive Chef.
Organized with a care for well executed food.
Attention to detail.
Excellent communication skills.
Ability to manage other people.
Ability to resolve conflict in a constructive manner.
Ability to solve problems.
Willingness to take initiative and make decisions.
Ability to delegate tasks effectively.
Experiences in similar role.
No Criminal record. Must meet character clearance.
